Meanwhile, wash the chops under cold water and pat dry with kitchen paper. Then season with salt and pepper on all sides. Heat the oil in a pan and sear the chops on both sides, remove and place in a baking dish.
Fry the diced onions in the frying fat. Add the diced apple and fry. Deglaze with apple cider and simmer for a few minutes. Then add the finely chopped habanero and the cream.
