Wash the chicken breast fillet, pat dry and cut into long, narrow strips. Thread the strips onto long wooden skewers in the shape of an accordion.
Chop the ginger very finely, coarsely chop the onions and garlic. Crush the chillies and peppercorns with the help of a mortar. For the marinade, put all the ingredients in a container and puree them finely.
Brush the chicken skewers with the marinade and leave for at least 3 hours in the refrigerator, covered with cling film.
