Wash the spinach thoroughly and pluck it into small pieces. Then blanch in hot water for about 5 minutes. Remove from heat and pour through a sieve.
In a separate pan, fry the chopped onion and the finely chopped garlic in the melted butter. When both are golden brown, add the spinach. After 1 - 2 minutes add the flour and stir in slowly. Deglaze with the milk and cream, add the vegetable stock powder and the remaining spices and let simmer a little more. Season to taste and serve.
Tastes great as a side dish and also with the classic boiled potatoes and fried eggs.
