- Bring the water to the boil, add salt, cook the pork tongues for about 1.5 hours, remove the skin while it is still hot, cool.
- Then cut the tongues lengthways into slices, then crosswise into strips, so that cubes are formed.
- Peel the onion, cut into half rings, mix with the pieces of tongue. Add salt and vinegar, mix, sprinkle with chopped chives.
