Brush the tofu slices with sambal oelek and grated ginger. Season with salt and pepper and pour sherry over it - marinate for approx. 20 minutes.
Heat the rapeseed oil in a pan. Brown the marinated tofu slices for approx. 2 to 3 minutes on each side. Add the finely chopped spring onions and fry briefly. Arrange on two plates and serve immediately.
