Instructions

  1. Knead the flour, butter, milk and salt into a dough and then chill for half an hour.
  2. Fry the ham cubes until crispy. I like to use some goat butter for it, it gives it a nice flavor.
  3. Peel off the onion and the clove of garlic, cut into small pieces, add briefly to the ham cubes and sweat until translucent. Put everything aside for the time being.
  4. Blanch the spinach and, if necessary, cut into coarse strips.
  5. Make a topping from the cream, milk, eggs, nutmeg, pepper, chervil and very little salt and whisk well.
  6. Roll out the dough in a tart pan and prick with a fork. Now pour the spinach, the diced ham with the onion on top and distribute the topping evenly in the mold. Crumble the cheese over it and bake at 180 ° C for about 30 minutes.
