- 200 g flour
- 100 g butter
- 5 tablespoon milk
- 1 pinch (s) salt
- 300 g spinach, fresh
- 125 g diced ham, smoked
- Butter (goat butter)
- 1 small clove garlic
- 1 medium onion (s)
- 200 g cheese (buffalo cheese), e.. as feta, mozzarella
- 125 ml cream
- 75 ml milk
- 2 medium egg (s)
- pepper
- salt
- nutmeg
- chervil

- Knead the flour, butter, milk and salt into a dough and then chill for half an hour.
- Fry the ham cubes until crispy. I like to use some goat butter for it, it gives it a nice flavor.
- Peel off the onion and the clove of garlic, cut into small pieces, add briefly to the ham cubes and sweat until translucent. Put everything aside for the time being.
- Blanch the spinach and, if necessary, cut into coarse strips.
- Make a topping from the cream, milk, eggs, nutmeg, pepper, chervil and very little salt and whisk well.
- Roll out the dough in a tart pan and prick with a fork. Now pour the spinach, the diced ham with the onion on top and distribute the topping evenly in the mold. Crumble the cheese over it and bake at 180 ° C for about 30 minutes.
