Instructions

  1. Whisk the spinach with the 2 eggs and spread on a baking sheet lined with baking paper, sprinkle the grated cheese on the spinach.
  2. Bake at 180 ° for 20 minutes (or 200 ° top and bottom heat).
  3. Let cool down completely.
  4. In the meantime, sauté the finely chopped onion with the chopped garlic in a saucepan. Add the tomato paste and feta - remove from heat. Mash everything well with a potato masher - season to taste with salt and pepper.
  5. Once the spinach and cheese platter has cooled down well, brush with the herb cream cheese. Then carefully spread the tomato and feta mix on the cream cheese - the tomato mixture is quite tough and mixes a little with the cream cheese - but it doesn`t matter.
  6. Now roll everything up lengthways (thanks to the baking paper it works very well - just loosen something at the edge and then roll it carefully with the help of the paper)
  7. When the roll is ready, wrap it well in aluminum foil and put it in the refrigerator for a few hours.
  8. Cut the finished roll into about 1.5 cm thick slices and arrange on a plate.
  9. The finished slices hold very well and are even suitable as finger food. The spinach roll is very popular with my guests.
