- Heat the oil in a pot. Briefly sauté the zucchini, onion and garlic.
- Add the chopped tomatoes, the spices and the vinegar.
- Cover and cook over a moderate heat for about 20 minutes. Then puree with the hand blender.
- Let the puree cool completely.
- Mix in the cream cheese evenly with a whisk.
- The spread should sit for a few hours before consumption.
