Ingredients

  • 200 g zucchini (cleaned, washed and finely diced)
  • 1 onion (s), (finely chopped)
  • 2 garlic clove (s), (finely chopped)
  • 2 tomato (s), (peeled, diced)
  • 1 tablespoon thyme
  • 1 teaspoon rosemary, (chopped)
  • 1 teaspoon oregano
  • 1 teaspoon, leveled chilli flakes
  • 1 teaspoon vinegar, (red wine vinegar)
  • 0.5 teaspoon ½ salt
  • Black pepper from the mill
  • 1 tablespoon olive oil
  • 75 g cream cheese, (low-fat)

Instructions

  1. Heat the oil in a pot. Briefly sauté the zucchini, onion and garlic.
  2. Add the chopped tomatoes, the spices and the vinegar.
  3. Cover and cook over a moderate heat for about 20 minutes. Then puree with the hand blender.
  4. Let the puree cool completely.
  5. Mix in the cream cheese evenly with a whisk.
  6. The spread should sit for a few hours before consumption.
