• 2 tablespoon clarified butter
• 4 steak (s) (variety your choice)
• 4 cl brandy
• 1 tablespoon tomato paste
• 1 tablespoon pepper (grains), green, pickled, with stock
• 250 ml cream
• salt and pepper

Instructions

1. Fry the steaks in hot clarified butter as desired. Set aside in aluminum foil and keep warm.
2. Deglaze the roast stock with brandy and stir in the tomato paste. Add the cream and peppercorns. Let the whole thing simmer a little.
3. Season to taste with salt and pepper.
