- Pour boiling water over the onions, leave to stand for 5 minutes, drain and peel off the peel.
- Preheat oven to 175 degrees.
- Heat the oil in a baking dish, add the onions and turn them in the oil.
- Add the bay leaves, thyme, tomatoes and wine. The onions should be barely covered.
- Sprinkle with salt and pepper (freshly ground).
- Braise in the oven for 1 1/2 hours. Move the onions from time to time.

- The onions can be braised 1 or 2 days in advance, because they taste even better if they are well drawn.
