Soak the gelatine according to the instructions on the package.
Mix the strawberry puree, buttermilk, sugar, lemon juice and zest.
Dissolve gelatine in a hot water bath or in the microwave. Stir a quarter of the buttermilk mixture into the hot gelatin and then mix with the entire buttermilk mixture. Fill into portion bowls brushed with a little oil and put in the fridge.
After turning, garnish with fresh strawberries as desired.
