Wash and clean the strawberries and cut into thin slices. Mix with cold elderflower syrup and lime juice and marinate in the refrigerator for 30 minutes.
Cut the limes into very thin slices. Place the strawberries, lime slices, and 8 to 10 small stalks of mint in a large carafe or punch bowl. Top up with ice-cold mineral water and ice-cold sparkling wine and serve immediately.
