Wash the strawberries, let them dry well and dice very finely.
Mix the butter, sugar, vanilla sugar, salt and lemon zest until frothy. Stir in egg yolks, buttermilk and cream.
Mix flour with baking powder and almonds and stir in as well. Beat the egg whites until stiff and fold in loosely together with the diced strawberries.
Bake in the oiled waffle iron at a high temperature for approx. 4-5 minutes until crispy. Sprinkle with powdered sugar.
Tip:
If there is currently no buttermilk in the house, mix 225 ml of milk with 2 tablespoons of lemon juice or vinegar, let stand for 5 minutes. Makes 250 ml of finished buttermilk.
