Mix the yeast with the lukewarm milk, the egg and a third of the flour. Let the pre-dough rest for approx. 10 minutes and then knead with the remaining ingredients for the bread roll dough (approx. 5 minutes).
Let the dough rest for another 15 minutes and in the meantime prepare the crumble dough. For the crumble, butter, sugar, flour and cinnamon are kneaded together.
Shape the dough into 10 round rolls and place them on a baking sheet lined with baking paper, leaving enough space between them.
