Instructions

  1. Cut the fillet lengthways and fill it with the ham and mozzarella. Do not season inside because of the flavor of the ham. Tie the fillet back together. I use toothpicks that I stick across the cut and then tie with thread like a shoe. A simple but very good solution. Then the fillet is peppered and fried. Then it is seasoned with sea salt and rubbed with the parmesan.
  2. Put in an ovenproof dish, pour in olive oil, balsamic vinegar and half of the red wine and place in the oven at 150 degrees for approx. 20-25 minutes up to a core temperature of 60 ° C. Wrap well in aluminum foil and let rest for 10 minutes.
  3. In the meantime, add the rest of the red wine to the gravy and let it simmer again.
  4. Serve with side dishes of your choice and serve with a little sauce.
