- 3 slices cooked ham
- 1 scoop mozzarella
- 50 g parmesan cheese
- 50 ml olive oil
- 50 ml balsamic vinegar, red
- 100 ml red wine, dry
- 2 stalks rosemary
- sea-salt
- pepper

- Cut the fillet lengthways and fill it with the ham and mozzarella. Do not season inside because of the flavor of the ham. Tie the fillet back together. I use toothpicks that I stick across the cut and then tie with thread like a shoe. A simple but very good solution. Then the fillet is peppered and fried. Then it is seasoned with sea salt and rubbed with the parmesan.
- Put in an ovenproof dish, pour in olive oil, balsamic vinegar and half of the red wine and place in the oven at 150 degrees for approx. 20-25 minutes up to a core temperature of 60 ° C. Wrap well in aluminum foil and let rest for 10 minutes.
- In the meantime, add the rest of the red wine to the gravy and let it simmer again.
- Serve with side dishes of your choice and serve with a little sauce.
