Instructions

  1. Toast the bread slices.
  2. Peel and core the avocados. Put the avocado pulp, peas and olive oil in a blender and puree. Or mash it finely in a bowl with a fork. Season with salt, pepper and lemon juice.
  3. Spread the avocado mixture generously on the bread slices. Place the soft-boiled egg on top, cut a little if necessary, so that the yolk spreads over the bread slices. Sprinkle the hemp and chia seeds on the bread. Serve garnished with coriander.
