Wash and dice tomatoes and sauté in a pan with hot oil. Peel and finely chop the clove of garlic and add. Wash the spring onions, cut into rings and also add. Let simmer for about 3 minutes. Add the tomatoes, peas and parsley. Season with salt and pepper.
Arrange the dumplings in a greased casserole dish, spread the tomato sauce and cheese over the top. Baked in a preheated oven at 175 degrees for about 20 minutes until golden brown.
