Instructions

  1. Cook the potatoes, let them cool slightly and peel them while they are still warm. Let cool completely and cut into 0.5 cm thick slices. Salt and pepper.
  2. Finely dice the onion, add to the very hot stock and season with vinegar, mustard, salt, pepper and sugar.
  3. Pour the hot marinade over the potatoes and let it steep for 1 hour. Then add the oil and mix carefully, season again with salt and pepper.

  5. Add 1/2 finely diced cucumber or hard-boiled egg or crispy fried bacon cubes or parsley or dill.
