- g 1,200 potato (s), waxy
- Salt and pepper, from the mill
- 1 onion (s)
- 200 ml broth
- 3 tablespoon vinegar
- 1 teaspoon mustard
- 1 teaspoon sugar
- 5 tablespoon oil

- Cook the potatoes, let them cool slightly and peel them while they are still warm. Let cool completely and cut into 0.5 cm thick slices. Salt and pepper.
- Finely dice the onion, add to the very hot stock and season with vinegar, mustard, salt, pepper and sugar.
- Pour the hot marinade over the potatoes and let it steep for 1 hour. Then add the oil and mix carefully, season again with salt and pepper.
- Variations:
- Add 1/2 finely diced cucumber or hard-boiled egg or crispy fried bacon cubes or parsley or dill.
