Separate the egg. Mix the maple syrup, vanilla extract, egg white, olive oil and salt.
Mix the oat flakes, almonds, sunflower seeds, almond flour and cinnamon in a separate bowl. Then add the liquid to the dry ingredients and mix everything well. Press everything onto a baking sheet lined with baking paper. Maybe moisten your hands for this. Bake on the middle rack for about 25 minutes until lightly brown. Turn the baking sheet halfway through the baking time. Open the oven door 1 or 2 times to let out steam.
Let cool for an hour. The muesli can then be stored locked for up to a week.
Add a few more fresh fruits in the morning, if necessary.
