Instructions

  1. Cut the pumpkin flesh into 1 cm cubes. Carrot and bell pepper into strips, cut the leek into rings. Cut the onion into small cubes. Drain the pineapple pieces, collecting the juice.
  2. For the sauce, mix oil, soy sauce, apple cider vinegar, water, tomato paste, cane sugar, a good splash of pineapple juice and a little salt in a bowl.
  3. Heat the butter and sauté the onions until translucent. Add the cut vegetables and cook for a few minutes. Pour in the sauce and cover (!) Cook everything until soft. Mix in the pineapple cubes and, depending on your taste, add salt and thicken with cornstarch.
