Instructions

  1. Remove the leaves from the lettuce, clean, rinse thoroughly and spin dry, then tear into bite-sized pieces.
  2. Mix the juice of half a lemon with 6-8 tablespoons of sugar in a salad bowl and let it rest for two or three minutes. Mix the cold milk slowly but quickly with the lemon juice, stirring vigorously, preferably with a whisk.
  3. Put the lettuce in the marinade and mix well so that all the lettuce leaves are moistened by the marinade. Finally sprinkle 1 - 2 tablespoons of sugar over the finished salad.
  4. This sweet salad tastes excellent as an accompaniment to hearty dishes, as a dessert or as an in between meal on hot days.
  5. Note on the marinade:
  6. If the milk is too warm, if it is not stirred vigorously or if too little sugar is used, there is a risk that the milk will curdle. As a rule of thumb for the amount of sugar: Sprinkle in enough sugar that it just soaks up the lemon juice, i.e. at the first moment before the sugar dissolves, the sugar-juice mixture should be thick when stirred.
  7. Without a salad, the marinade is a refreshing milkshake and can be served with a sprig of fresh mint!
