Instructions

1. Let the sweet potatoes cool, then dice them, put them in a freezer bag and place in the freezer for at least 5 hours or overnight.
2. Puree the frozen sweet potato pieces with all the other ingredients using the blender. If the mixture is too tough, dilute with vegetable milk. The ice cream can be served immediately, otherwise store it in the freezer again.
