Sprinkle the very finely chopped garlic with the salt and grate it in a mortar to a paste. Whisk all ingredients together in a bowl until you have a creamy dressing (add a little more water if necessary).
Leave to steep in the refrigerator for at least 1 hour, preferably overnight, and e.g., enjoy it with a mixed raw vegetable salad or serve as a dip with a raw vegetable platter.
