First prepare the honey and let it steep. Pluck the thyme leaves from the stalks, chop roughly to taste and mix approx. 1 tablespoon of it with the honey.
Preheat the oven to 240 ° C top / bottom heat.
Roll out the dough on baking paper on a baking sheet. Chop about 1 tablespoon of the rest of the thyme leaves, mix with the crème fraîche and spread the back of a knife onto the dough. Leave an approx. 1 cm wide border free all around.
Halve the figs and cut into thin slices, the onions into thin wedges and the bacon into strips about the width of a thumb. Dice or crumble the feta. Distribute the ingredients one after the other on the dough and season with freshly ground pepper to taste. The feta already gives off quite a bit of salt, so salt it carefully.
Bake the tarte flambée in the preheated oven for approx. 15-20 minutes until the desired brown color. Drizzle the honey over the tarte flambée a good 5 minutes before the end of the baking time and continue baking.
