- Preheat the oven to 190 degrees, with convection to 170 degrees.
- Separate the egg and whisk the yolks lightly.
- Roll out the puff pastry and place on a baking sheet. Fold the edges over and brush with the egg yolk.
- Wash the pear and cut into wedges.
- Wash the thyme and pick off the leaves.
- Spread crème fraîche on the dough, season with salt and pepper. Top with slices of pear and cut ham slices.
- Sprinkle with grated parmesan and half of the thyme.
- Bake in the oven for about 20 minutes until golden brown.
- Sprinkle with the remaining thyme before serving.
