- Cut the avocado, onions, tomatoes and lime into small pieces and mix well with the beans, peas, corn and coriander in a suitable bowl.
- Then in a saucepan, bring the vinegar with oil, herbs, honey, salt and pepper to a boil over medium heat, stirring, and then allow to cool.
- Now bring everything together, mix well again and then, tightly closed, refrigerate overnight.
- Serve with chips to dip on. Excellent for grilling.
