Instructions

  1. Quarter the cucumber lengthways, core and cut into fine strips. Core the chilli pepper and cut into fine rings. Cut the shallots into fine rings.
  2. Bring the vinegar, sugar and salt to the boil until the sugar has dissolved, allow to cool and pour over the salad, let it steep for at least 15 minutes.
