- For the majo:
- Mix the egg yolks and mustard with a whisk.
- Add the oil drop by drop while stirring until an emulsion is formed. Then stir in the oil with a thin stream.
- As soon as the mayonnaise has thickened, season and add the vinegar.
- For the dressing:
- Finely dice the peppers and serve with the finely chopped shallots.
- Mix the majo, yoghurt, chili sauce and ketchup together.
- Now add peppers and shallots and season with the remaining ingredients to taste.
