Brush the bread slices with the cream cheese and season with plenty of salt and pepper. Place a folded slice of ham on each slice of bread.
Halve the cucumber lengthways and scrape out the seeds with a small spoon. Tip: Do not dispose of the seeds, but fill up with mineral water in a glass. Add a splash of lemon and some grated ginger and you have wonderfully refreshing slimming water.
Now slice the cucumber with the skin lengthways on a kitchen slicer into long, fine strips. Spread this on the ham sandwich and lightly pepper, but do not add salt!
Heat some oil in a pan on medium heat and fry the two eggs to make fried eggs. Season with salt, pepper and chilli flakes and place on the cucumber strips.
