Remove the avocado pulp from the skin, immediately drizzle with lime juice, mash with a fork and season with salt and pepper. Cut the tomato and pepper into thin slices.
Brush each half of the toasted bun with avocado cream and spread the vegetables on top.
Fry the eggs in the heated fat if you like, place them on the toast rolls, season with salt, pepper and chilli flakes, sprinkle finely plucked coriander leaves on top and serve immediately.
