Instructions

  1. Melt the diced onion in a smaller pan with 3 tablespoons of oil over moderate heat until it is soft and lightly browned.
  2. Deglaze with red port wine and let reduce.
  3. Add the garlic, stir and remove the pan from the heat.
  4. Put the butter with the tomato paste in a bowl. Add the pimento d`Espelette.
  5. Add the melted onion cubes, mix everything well and season with salt and pepper.
  6. Place in a cool place and serve with freshly baked bread or grilled meat.
