- Melt the diced onion in a smaller pan with 3 tablespoons of oil over moderate heat until it is soft and lightly browned.
- Deglaze with red port wine and let reduce.
- Add the garlic, stir and remove the pan from the heat.
- Put the butter with the tomato paste in a bowl. Add the pimento d`Espelette.
- Add the melted onion cubes, mix everything well and season with salt and pepper.
- Place in a cool place and serve with freshly baked bread or grilled meat.
