Mix the oil, vinegar, lemon juice, salt and pepper in a larger bowl and season the dressing vigorously. Cut the goat cheese into slices and marinate in the seasoning mixture for 10 minutes.
Then place the cheese slices on a plate.
Cut off the thick stems from the washed rocket, turn the leaves in the remaining seasoning mixture several times and then distribute them on a large, flat plate.
Cut the washed and cleaned tomatoes and figs into slices.
Now alternately arrange a tomato, cheese and fig slice on the plate like a brick until all the slices are laid out. Sprinkle some more pepper over the top, garnish and serve. Very fresh and filling.
