Bring the meat stock to a boil, add the tortelloni and cook in them, then drain.
Peel off the clove of garlic and rub it in a saucepan. Add the crème fraîche and milk, stir and bring to the boil. Add the tortelloni, season with salt, pepper and grated nutmeg and simmer a little.
Cut the ham into strips. Wash the chives, cut finely, add to the tortelloni with the ham strips, stir in and serve immediately.
