Instructions

  1. Wash and peel the potatoes. Cut into very fine slices and place in a saucepan with cold salted water. Bring to a boil and cook half cooked for about 5 minutes.
  2. Heat the oil in the frying pan. Add the onions and stir. Add potato slices. Swirl and stir the pan so that nothing sets. Season lightly with salt and pepper.
  3. Whisk the eggs in a bowl and season well with salt and pepper. Fry the potatoes and onions on a slightly lower heat until golden brown, stirring well. Pour the potatoes and onions into the beaten eggs and mix well.
  4. Put the pan back on the stove and, as soon as it is hot, pour the mixture into it. It will stop immediately. Fry for 2 minutes, turn the tortilla and finish frying.
