Mix the types of flour in a bowl, make a well in the middle and gradually add the water. Prepare a firm dough with a flat knife blade (available from specialist retailers).
Now place the dough on a floured board and knead for about 3 minutes until the dough is soft. Divide the dough into 8 parts and roll out to paper thickness.
Heat a heavy pan, add a tortilla and bake for a few seconds. When the edge starts to curl, turn over and bake from the other side. Gradually bake the dough in this way.
