Sauté the onion with the parsley. Dust with a little flour and make sure that there are no lumps. Add the meat stock, bay leaves, juniper berries and cloves, simmer gently for about 10-15 minutes. Add tripe and trollinger, season with a little salt, pepper and lemon juice. Let simmer for another 5 minutes. Season again if necessary.
If necessary, bind with flour butter.
Fried potatoes with onions and bacon go well with this. Trollinger is of course drunk.
