Ingredients

  • 500 g tripe, pre-cooked and cut into strips
  • 1 onion (s), finely diced
  • 500 ml meat broth
  • 250 ml wine (Trollinger), dry, Lemberger also works
  • 1 bunch parsley
  • Lemon juice
  • butter
  • 1 tablespoon corn flour
  • 1 bay leaf
  • 5 juniper berries
  • 4 carnation (s)
  • salt and pepper
  • possibly flour butter

Instructions

  1. Sauté the onion with the parsley. Dust with a little flour and make sure that there are no lumps. Add the meat stock, bay leaves, juniper berries and cloves, simmer gently for about 10-15 minutes. Add tripe and trollinger, season with a little salt, pepper and lemon juice. Let simmer for another 5 minutes. Season again if necessary.
  2. If necessary, bind with flour butter.
  3. Fried potatoes with onions and bacon go well with this. Trollinger is of course drunk.
