- Mix the flour, baking powder and baking soda with the pudding powder and set aside.
- Butter, preferably soft but not liquid, beat sugar and egg together vigorously until frothy (approx. 1 minute)
- Then add the quark, applesauce and buttermilk and beat again. (This is best done with a wooden spoon).
- Now gradually add the flour mixture and stir vigorously again, but only briefly!
- Now fold in the finely chopped chocolate and pour into the muffin cups. (I have 6 trays myself and fill them up to almost 3/4)
- Place the muffins in the oven preheated to 190 ° and bake at 170 ° C for about 20 minutes.
