Instructions

  1. Mix the flour, baking powder and baking soda with the pudding powder and set aside.
  2. Butter, preferably soft but not liquid, beat sugar and egg together vigorously until frothy (approx. 1 minute)
  3. Then add the quark, applesauce and buttermilk and beat again. (This is best done with a wooden spoon).
  4. Now gradually add the flour mixture and stir vigorously again, but only briefly!
  5. Now fold in the finely chopped chocolate and pour into the muffin cups. (I have 6 trays myself and fill them up to almost 3/4)
  6. Place the muffins in the oven preheated to 190 ° and bake at 170 ° C for about 20 minutes.
  7. (I then let the muffins cool in the open, with the oven door open in the molds)
  8. The muffins are very fluffy and particularly tasty, but watch out, very sweet!
