Beat the marzipan and margarine until creamy. Add the flour, powdered sugar, vanilla sugar and egg yolk and knead into a smooth dough, wrap in foil and refrigerate for 30 minutes.
Roll out the dough between 2 layers of cling film or baking paper 1/2 cm thick, cut out approx. 4 cm hearts, stars or other shapes (I always make diamonds) and place on a baking sheet lined with baking paper.
Bake in a preheated oven (E 200 °, gas: setting 4, fan: 180 °) for 8 - 10 minutes. Cool on a wire rack.
For the filling, chop up the chocolate and melt it in a water bath. Whip the margarine, powdered sugar, rum and mascarpone, add the chocolate spoon by spoon. Pour the mixture into a piping bag and chill until the cream has set.
Pour on the filling and put 2 cookies together.
Cover with one of the liquid glazes.
To garnish, put the different colored glaze in a plastic bag, cut off a small corner and decorate the cookies.
Garnish with the decoration material of your choice.
