Peel the quince, cut into eighths and core. Dice turkey meat (3 cm x 3 cm).
Brown the meat in hot oil all over. Add the onions and quinces and fry for a few minutes. Then add curry paste and coconut milk. Salt as needed. Cover and simmer for approx. 10-15 minutes, until the quinces are soft. Finally, add a little sugar to taste. Serve sprinkled with parsley.
