Clean and wash broccoli and cut into florets. Cover and simmer in the boiling broth for 5-7 minutes, drain and collect the broth. Wash the schnitzel, pat dry and cut into cubes. Fry the meat cubes in oil for about 5 minutes, season with salt and pepper. Add the stock and cream to the meat, bring to the boil, add the saffron and cook for 5 minutes, thicken the sauce. Add the broccoli to the sauce and season with salt and pepper.
