Cut turkey legs into large cubes. Season with pepper and curry. Turn the meat cubes in flour (I always put the seasoned meat cubes in a plastic bowl with a lid, add a little flour and shake the whole thing vigorously - so the meat is evenly and thinly floured) and fry vigorously in portions in hot fat.
