Instructions

  1. Sweat the chopped onion in a little butter, add the meat and fry slowly.
  2. Add the sliced carrots and sweat briefly, deglaze with hot stock and cook for 15-20 minutes. Add the creme fraiche, season with salt and pepper,
  3. Thicken with a little roux, then add a pinch of nutmeg to taste.
