Rinse the schnitzel with cold water, dab and cut into medallions. Whisk the oil with a little salt, pepper and cumin. Marinate the meat with it and cover and leave to stand for 2 hours.
Preheat oven to 175 degrees.
Wash and clean zucchini and tomatoes, cut into slices that are not too thin.
Grease a baking sheet and pile up zucchini, then turkey medallions, and then tomatoes. Salt the vegetables and sprinkle with grated cheese. Bake on the middle rail for about 20 minutes.
You can prepare the tray a few hours before baking, put it in the fridge and just sprinkle cheese over it just before baking.
