Salt and pepper the turkey schnitzel and place in a small baking dish. Core the pepper and cut into strips. Halve tomatoes. Remove the stem from the peppers. Dice the sheep cheese.
Spread the prepared vegetables and cheese over the schnitzel. Drizzle with the pesto and olive oil. Sprinkle the vegetables with salt and pepper and sprinkle with Mediterranean herbs as required.
Bake in the top for 25 minutes.
You can also vary with capers, onions, olives and zucchini.
