Sauté the onion and garlic in oil until translucent and add the washed beans, carrots, celery and leek. Roast the whole thing a little, add the canned tomatoes, deglaze with the stock and stir in the parsley. Now let it simmer for about 30 minutes (depending on how soft you want the vegetables)!
For serving, sprinkle with parmesan and serve with fresh pastries!
